মায়ের রেসিপি (Mom's Recipe)

This is Mom's signature chicken curry, আলু দিয়ে মুরগির ঝোল (Alu Diye Murgir Jhol): a comforting, home-style Bengali curry of bone-in chicken and fried potatoes in a light, deeply aromatic gravy. Unlike many traditional cooks who inherit recipes through generations, Mom is entirely self-taught. "I learned everything on my own," she says.

What makes her version special is the dual-stage spice building: a slow, patient braise (কষানো/koshano) of the chicken in its own juices, then a separate spiced onion tempering (তড়কা/tarka) poured in at the very end that lifts the whole gravy.

The ingredients

What the kitchen needs

  4. Simmer until tender, about 20-25 minutes: the chicken should reach 180°F inside, with a medium-thick gravy

The Finishing Tempering (তড়কা)

This final flourish is what sets Mom's curry apart. Turn off the heat under the main pot, then in a separate small pan:

  1. Heat 2 tablespoons of over medium-high heat
  2. Sauté the until soft, about 3-4 minutes
  3. Bloom the spices in the oil: , , , and , about 20-30 seconds

Mom's Tips

  1. Ginger over Garlic: Always use slightly more ginger paste than garlic paste. Garlic overpowers; ginger balances the chicken with a warm, sweet undertone.
  2. The Power of Bhuna: Sauté the spice paste until the oil fully separates and floats before adding the meat. This removes the raw spice taste and builds the flavor base.
  3. No Cold Water: When making the jhol, always add hot water. Cold water shocks the pot and can turn the chicken rubbery.
  4. Patience in Simmering: Let the chicken braise in its own juices first (koshano) before any water goes in. "Aste aste eita hok, eitai bhalo."
  5. The Finishing Tarka: A separate tempering of onions and bloomed spices at the end delivers the fresh aroma that defines this curry.
  6. Turmeric Caution: Use turmeric sparingly. Too much turns the gravy bitter and medicinal.
  7. Thick or Saucy, Your Call: Mom cooks it down until the gravy clings (মাখা মাখা, makha makha) for the richest flavor, but leave more gravy (ঝোল, jhol) if you prefer. As she says, "মাখা মাখাই তো মজা" (makha makhai to moja): thick is where the tastiness is.
